A Simple Winter Dinner Party

Looking to shake the winter blues? Try inviting some friends over for a winter dinner party. Keep it simple, by going with rustic food and a bistro look on your table and put the focus on sharing time together.

When guests arrive put out a cheese plate. Let everyone relax, unwind and catch up with each other after the holidays. For dinner I recommend serving a dish like Rosemary – Baked Chicken and Potatoes. Let me count the things I love about this dish… one pan, two delicious and three so simple.  As you cook it, the smell will permeate your home and have everyone wanting to come to the table.  I really love it for a simple, but special winter dinner party – it tastes like you were cooking all day. I got the recipe from my go-to favorite McCormick.com, this site is chock full of great menu ideas including the following apple pie dessert. Serve the chicken with a nice bottle of wine ( I would select a Pinot Noir or medium bodied Chardonnay with toasty oak notes) and finish with an equally rustic dessert like this Easy Apple Pie (for recipe use link). Set your table bistro style, which means plain white dishes and a few votive candles. You can line white pillar candles down the center of your table to add more ambiance. For each place setting use a white napkin and a sprig of green herbs.  Try rosemary since your using it in the dinner.

Your guests will more than enjoy this meal and you’ll be able to enjoy their company. Enjoy!

Rosemary-Baked Chicken with Potatoes
Makes 6 servings.
Prep Time: 15 minutes
Cook Time: 50 minutes

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon McCormick® Paprika
  • 1 1/2 teaspoons McCormick® Rosemary Leaves, finely crushed
  • 1 teaspoon Sea Salt from McCormick® Sea Salt Grinder
  • 1/2 teaspoon McCormick® Black Pepper, Coarse Ground
  • 1/2 teaspoon McCormick® Garlic Powder
  • 6 bone-in chicken thighs, skin removed (about 2 pounds)
  • 1 1/2 pounds small red potatoes, halved

Directions:

1. Preheat oven to 425°F. Mix oil, paprika, rosemary, sea salt, pepper and garlic powder in large bowl. Add chicken and potatoes; toss to coat well. Arrange potatoes in single layer on foil-lined 15×10x1-inch baking pan sprayed with no stick cooking spray.

2. Bake 15 minutes. Push potatoes to one side of pan. Place chicken on pan.

3. Bake 30 to 35 minutes longer or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
